BLT Potato Salad

I'm kind of on a bacon kick. Don't judge me.

BLT Potato Salad
6 small potatoes, peeled
2 eggs
5 scallions
8 slices of bacon
1 pint of cherry tomatoes
1 cup of sour cream
1/2 cup of Miracle Whip
1/4 cup of milk
1 lemon, juiced
11/2 tsps of salt
1 tsp of pepper

Preheat the oven to 400'. Dice the potatoes into bite-sized pieces. Add them to a large pot, with the eggs, cover with enough water to fully immerse them, and bring to a boil over medium high heat. Meanwhile, line a baking sheet with tin foil and lay the bacon in strips on it. 

Bake the bacon in the oven for 15-20 minutes, or until the bacon is crisp. Drain on paper towels, then crumble.

While the bacon and the potatoes are cooking, make the salad dressing. Combine the sour cream, Miracle Whip, milk, lemon juice, salt and pepper. Then, slice the cherry tomatoes in half (or thirds), and chop the scallions. 

When the potatoes are fork tender, drain them. Add them to a large mixing bowl. Peel the eggs and mash them. Add the eggs, tomatoes, bacon, and scallions to the potatoes and toss with the dressing to coat.
