Skinny Pancakes

Everyone always says you're either a pancake or a waffle person. I don't know who this "everyone" is, but I'm definitely a pancake person. I love a good, thin, crispy pancake with warm syrup and strawberry jam. Yum.

Skinny Pancakes
1 eggs
3/4 cup of flour
1/4 tsp of salt
2 tbsp of butter, melted
1 cups of milk
1 tsp of baking powder
2 tsp of sugar
1 tsp of vanilla
Syrup, warmed
Strawberry jam, warmed
Butter, for frying and for serving

Preheat a griddle or a frying pan over medium heat. 

Combine all of the ingredients in a blender and blend until smooth. 


Melt a teaspoon of butter on the griddle/frying pan. Drop 1/4 cup of pancake batter onto the hot pan and allow to cook until bubbles start popping up and the edges begin to brown. Flip and cook for another one to two minutes. Continue until all of the batter is used up.

Serve warm with syrup, strawberry jam, powdered sugar, etc...

This recipe made me 10 pancakes.
