Chicken Parmesan

I love chicken parmesan, but this new healthy eating thing is throwing it all off. I reinvented it! And it's delicious!

Healthier Chicken Parmesan 
2 chicken breasts
1/2 cup of mozzarella cheese
1 tsp of garlic
2 tbsp of chopped parsley
1/4 cup of marinara sauce
Salt & pepper
Olive oil

Preheat the oven to 350'. Line a baking sheet with tin foil.

In a small bowl, combine the cheese, garlic and parsley.

Heat a teaspoon of olive oil over medium heat in a frying pan.

Using the back of a rolling pin or a hammer or a meat tenderizer or something, flatten the chicken breasts. In the center of each chicken breast, add the cheese filling. Top the filling with the marinara sauce. Roll the chicken breast up and secure it in place with a toothpick.

Place each chicken breast seam-side down in the frying pan and cook until it begins to brown. At that point, transfer it to the prepared baking sheet and finish cooking it for around 20 minutes more, or until cooked through.
