Broccoli, Chicken and Cheese Stromboli

Charlie and I are going on a healthy eating kick. It's an attempt to feel better connected with our bodies and to feel better about the nutrition we're putting into them, as well. This stromboli is so good. SO good.

Brocolli, Chicken & Cheese Stromboli
1 loaf of frozen bread dough, thawed or refrigerated pizza dough
1 cup of broccoli, chopped
1 chicken breast, cubed
1 tsp of olive oil
Salt & pepper
1 tsp of garlic
2 tbsp of chopped parsley
1 tbsp of chopped basil
1 cup of shredded Monterey jack cheese
1/2 cup of shredded mozzarella cheese
1 tsp of butter, melted
1 tsp of sesame seeds
Marinara sauce for dipping

Preheat the oven to 350'. Grease a baking sheet or line it with parchment paper. 

In a frying pan, heat the olive oil over medium heat. Add the chicken and season it with salt and pepper. Cook until the chicken is browned and cooked through, about 7 or 8 minutes. 

Meanwhile, roll out the pizza or bread dough into a rectangular shape. It doesn't have to be perfect. Sprinkled the rectangle with the parsley, garlic, basil, brocolli and both cheeses. When the chicken is through cooking, add that to the mix. 

Starting with the side closest to you, begin rolling up the rectangle, long-wise. Pinch the ends and the sides together. Transfer the stromboli to the prepared baking sheet and brush the top of it with the melted butter and sprinkle it with the sesame seeds. 

Bake for 20-25 minutes, or until the stromboli is golden brown. Serve with the marinara sauce.
