Peanut Butter Cups

1/4 cup of butter
3/4 cup of smooth peanut butter
3/4 cup of really, really, really crushed graham crackers, plus more for topping
1/4 cup of powdered sugar
1/4 tsp of salt
1 1/2 cup of chocolate chips
Line a 24 count mini muffin tin with liners.
In a small saucepan, melt the butter. Remove it from the heat and add in the peanut butter, the graham cracker crumb, the salt and the powdered sugar. Spoon a tablespoon of the mixture into the bottom of each muffin cup.
Put the muffin tin in the refrigerator.
In a microwave safe bowl, melt the chocolate in 30 second increments. Make sure the mixture is smooth and completely melted.
Remove the muffin tin from the fridge and spoon the melted chocolate over each peanut butter cup, enough to cover the top. Sprinkle crushed graham cracker crumbs on top.
Refrigerate the peanut butter cups for an hour, or until the chocolate has firmed up and the chocolate is set.
