Mashed Potato, Corn and Chicken Taquitos

Charlie and I love mashed potatoes, but we never seem to eat the leftovers. This is a way to do just that.

Mashed Potato, Corn and Chicken Taquitos

1 cup of leftover mashed potatoes
1 8.75oz can of corn 
1/4 cup of chopped cilantro
1 cup of shredded, cooked chicken
8 flour tortillas
Oil for frying
Salsa, lime wedges, cilantro for serving

In a medium sized, microwave safe bowl, mix together the mashed potatoes, corn, and chicken. Microwave until the mixture is warm, about 2 minutes. 

When the mashed potato mixture is warmed, stir in the cilantro. 

Heat a tablespoon of oil in a frying pan.

In the middle of a flour tortilla, add 2 tablespoons of the mashed potato mixture, then fold in the sides and roll up the tortilla. Repeat with the remaining tortillas, or until the mashed potato mixture is gone. 

Fry the taquitos seam side down until golden brown, then flip and allow the other side to cook. Repeat until the rest of the taquitos are done. 

Serve with salsa, lime wedges, cilantro, cheese, sour cream, etc...
