Honey Apricot Sesame Chicken

I'm not sure you read that title correctly, because it seems to me that you're still sitting there at your computer. Why are you not jumping out of your chair, running to the kitchen, and making this delicious chicken?! Get on it!



Honey Apricot Sesame Chicken

2 tbsp of honey
3 tbsp of apricot jam/jelly/whatever you can find apricot
1/8 tsp of ground ginger
2 tbsp of sesame seeds
5 tbsp of low soy sauce
1 garlic clove, grated
1/4 of a small onion, diced
3 small zucchini's, sliced
1/2 cup of cornstarch
4 boneless, skinless chicken breasts, cut into cubes
salt
vegetable oil
Cooked white rice, to serve

In a small bowl, whisk together the honey, apricot jam, ground ginger, sesame seeds, and soy sauce. Set aside.

In a large bowl, add the cornstarch. Salt the chicken, then dredge in the cornstarch until the chicken is completely coated.

Heat a wok or a large skillet on medium heat with enough oil to coat the bottom of the pan. Fry the chicken until done, about 6 minutes, and then set aside on a paper-towel lined plate.

Add a tablespoon more of oil to the pan and add the garlic and onions. Cook until the garlic is fragrant, about 2 minutes, and then add the zucchini. Cook the mixture until the zucchini softens and starts to brown.

Add the sauce to the pan and stir until the mixture boils. When it boils, turn the heat off and allow the mixture to thicken for around 5 minutes. When it does, add in the chicken and toss to coat. Serve immediately over rice.
