Mocha Cupcakes

I make these cupcakes all of the time because they are my roomie's favorite, and she doesn't even like coffee. They really are delicious.

Mocha Cupcakes
Adapted from My Baking Addiction
1 1/3 cups of flour
1/3 cup of unsweetened cocoa powder
1 tsp of baking powder
1/2 tsp of baking soda
1/4 tsp of salt
1/2 cup of milk
1/2 cup of strongly brewed coffee
1 tsp of vanilla
1/2 cup of butter, at room temperature
1/2 cup of sugar
1/2 cup of brown sugar
1 egg
3/4 of a cup of semi-sweet chocolate chips (optional)
Chocolate covered coffee beans (optional)
Cocoa powder (optional)

Preheat the oven to 350' and line cupcake tins with liners. This recipe usually makes me around 18 cupcakes.

Sift together the flour, cocoa powder, baking powder, baking soda and salt in a medium bowl. In a liquid measuring cup, combine the milk, coffee and vanilla.

In a large bowl, beat together the butter and sugars until light and fluffy. Add in the egg and beat until combined. Slowly add in the flour mixture, alternating with the coffee mixture, but ending with the flour mixture. When combined, stir in the chocolate chips.

Fill the cupcake liners two-thirds of the way full and bake for 17-20 minutes or until a toothpick inserted in the middle of a cupcake comes out clean. Let cool.

Buttercream Frosting
1 cup of butter, at room temperatre
2 cups of powdered sugar
1 tsp of vanilla
2 tbsp of milk or heavy cream

In a bowl, cream together the butter and sugar. Add in the vanilla and milk. Add more powdered sugar or milk depending on your desired consistency.

Pipe frosting onto each cupcake, sprinkle with cocoa powder and top with a chocolate covered coffee bean.
