Coke Can Chicken

My best friend Bri had this brilliant idea to make chicken with a coke can shoved up its nether regions. She saw this recipe awhile back, and we decided to make it with rosemary potatoes. Delicious.

Coke Can Chicken
1 can of coke or beer or wild cherry pepsi (which is what we used)
1 whole chicken
1/2 an onion
1/2 lemon
2 cloves of garlic, smashed
1/2 tsp of oregano
1/2 tsp of salt
1/2 tsp of pepper
1/2 tsp of thyme
1/2 tsp of basil

Preheat the oven to 350'.

Open the can of coke or beer or whatever you chose. Discard 1/2 of the can, so the can is half full. Using a can opener, remove the top half of the can so that it is exposed.

Clean the chicken. Remove the insides, leaving the cavity hollow and clean. Pat the chicken dry.

In a small bowl, combine the oregano, salt, pepper, thyme and basil. Season the chicken inside and out with the spices.

In the open can of whatever, add the garlic and half of the halved onion. Squeeze the juice from the lemon into the can.

Place the can onto a large roasting tray, then lower the chicken down onto the can, filling its cavity with the opened can. Stuff the neck of the chicken with the leftover onion and the squeezed lemon.

Roast the chicken for an hour to an hour and half or until internal temperatures reach 180'.

When removing the chicken from the oven, be very careful. Don't do what I did and tip the chicken over, spilling wild cherry pepsi pop all over the counter. Awesome.
