That's right, you read correctly. These are not only cupcakes, but chocolate chip cookie dough cupcakes. Yeah, you're only going to be able to eat half, but that means you'll have more opportunities to eat these delicious things!
Chocolate Chip Cookie Dough Cupcakes
Adapted from Baking Junkie
1 box of Devil's food cake mix
1/3 cup of water
1 1/3 cup of vegetable oil
Preheat the oven to 350. Combine all of the ingredients, mixing well. Spoon into a lined cupcake tin, 2/3 of the way full and bake for 25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool.
Chocolate Chip Cookie Dough Filling:
4 tbsp of butter, softened
6 tbsp of brown sugar
1/2 tsp vanilla
1 cup plus 2 tbsp of flour
1/2 can (around 7 oz) of sweetened condensed milk
1/4 cup of mini semi-sweet chocolate chips
Cream together the butter and sugar. Add in the vanilla, flour, and sweetened condensed milk. Mix well, and then fold in the chocolate chips. Cover the filling and refrigerate for an hour.
Brown Sugar Frosting:
3 sticks of butter, softened
3/4 cup of brown sugar
3 1/2 cups of powdered sugar
1 cup of flour
3/4 tsp of salt
3 tbsp of milk
2 1/2 tsp of vanilla
Cream together the butter and brown sugar. Slowly incorporate the powdered sugar, mixing until smooth. Add in the flour and salt, and then finish with the milk and vanilla. Mix until the frosting is creamy and smooth, not too thick, but not too thin. Add more powdered sugar or milk as needed.
Cut a cone out of the center of each cupcake. Roll a teaspoon of the filling into a ball, placing the ball into each cupcake hole. Top each cupcake with the icing to cover the filling. Garnish with extra chocolate chips.
