Eggless Chocolate Cake

I was craving chocolate cake and there weren't any eggs in the apartment. This happened.

Egg-Free Milk-Free Chocolate Cake

1 cup of flour
1 cup of white sugar
3 tbsp of cocoa powder
1 tsp of baking soda
1 tsp of baking powder
1/2 tsp of salt
1/3 cup of vegetable oil
1 tbsp of white vinegar
1 tsp of vanilla extract
1 cup of water

Preheat the oven to 350'. Grease an 8x8 inch square pan.

In a large bowl, combine all of the dry ingredients with a whisk.

In a large measuring cup, combine all of the wet ingredients.

Add the wet ingredients to the dry ingredients and whisk until just combined.

Pour the batter into the prepared pan and bake for 30 minutes, or until a toothpick (or knife) comes out clean.

Chocolate Frosting
1/2 cup of margarine, room temperature
1 tsp of vanilla
2 tbsp of cocoa powder
1 cup of powdered sugar

In a large bowl, mix the margarine, cocoa powder and vanilla. Slowly add in the powdered sugar. This is going to make a mess and your face is going to be covered in powdered sugar. It'll be worth it.

If the frosting is too thick for your taste, add milk or water by the teaspoon until a desired consistency is reached.
