Cilantro Lime Chicken Tacos


This is my best friend Michael:

He also cooks, and made me these tacos one day. I haven't stopped eating them since. 


Cilantro & Lime Chicken Tacos
Adapted from Mr. Michael Blevins, himself
4 chicken breasts, cut into small cubes
1 bunch of cilantro, chopped
5 limes
2 tbsp chili powder
Shredded Monterey Jack cheese
Corn tortillas, warmed

Heat a large skillet over medium-high heat. Juice four of the five limes into a plastic, resealable gallon bag. Add the chili powder and half of the cilantro, along with the chicken. Seal the bag and shake the mixture, coating the chicken. Set aside.

Slice the fifth lime into wedges. In the skillet, dump the entire contents of the plastic bag. Cook the chicken until done, 10-15 minutes.

To assemble: top each corn tortilla with the cilantro lime chicken, then the cheese, then the cilantro. Squeeze fresh lime juice over the top.



This makes a lot of chicken tacos, but believe me, you're going to want the leftovers.
