Breakfast Burritos

I'm a big fan of using up whatever is in the fridge to make burritos. Burritos are delicious, specifically the breakfast kind.


Breakfast Burritos
1 cup of leftover potatoes
4 pieces of leftover bacon
1 tbsp butter
2 eggs, beaten
2 tortilla shells, warmed
1/4 cup cilantro, chopped
1/4 cup salsa
1/4 cup shredded cheese
1/4 cup sour cream

Reheat the potatoes and bacon; this can be done in the microwave or on the stove. I opted for less dishes and microwaved them.

While the potatoes and bacon are reheating, scramble the eggs in the butter.

To assemble: spread the sour cream and salsa on the bottom of the tortilla, topping with the eggs, cilantro, bacon, potatoes, and shredded cheese. Fold into a burrito-type shape, mine is always more of a burrito salad.
